Step-by-Step Cooking Method

Step 1 – Prepare the Kadai Masala

Dry roast coriander seeds, cumin, dried red chillies, peppercorns, cloves, and cardamom until fragrant. Allow them to cool before grinding into a coarse spice mix.

Step 2 – Sauté the Vegetables

Cook capsicum and onion petals over high heat for a few minutes until lightly charred while remaining crisp. Set aside.

Step 3 – Prepare the Gravy

Cook onions until golden before adding ginger-garlic paste. Add tomatoes and cook until the mixture becomes rich and the oil separates.

Step 4 – Add the Spices

Mix in turmeric, Kashmiri chilli, cumin powder, salt, and the freshly prepared kadai masala. Cook until aromatic.

Step 5 – Finish the Curry

Add paneer, sautéed vegetables, and a little water. Simmer gently before finishing with kasuri methi, garam masala, fresh coriander, and a touch of cream if desired.
